Meriterese Racanelli, M.S.

Meriterese Racanelli, M.S. is a Food Scientist and Clinical Nutritionist working with Goya Foods internationally. A Celiac and popular international speaker, she has almost 20 years as a renowned expert on cultural foods, nutrigenetics, botanicals, phytonutrients, and their effects on the body, disease, allergies and conditions like Celiac. Besides her Master’s of Science degrees in Nutrition and Food Science, Suma Cum Laude from Montclair State University, where she serves as an adjunct professor in Nutrition and Food Sciences, Meriterese completed her Clinical Dietetics and Medical Nutrition Therapy training Magna Cum Laude from MSU, via hospitals in New Jersey, and majored in pre-med/biology in her under-grad degree.

Meriterese also earned the national certification in Child & Adolescent Weight Management from the American Dietetic Association, and completed university Chef training and other certifications. She’s authored books, consumer and celebrity’s recipe books, menus and nutrition plans, and consumer education materials printed in various languages. Her multi-cultural kids nutrition and fitness programs have been used in schools and recreation departments, received awards and partnered with Radio Disney and Nickelodeon.

As Food Scientist and Clinical Nutritionist at Goya Foods, Meriterese helps guide the R&D teams and other departments on healthy recipe development; product development; analysis; pros and cons of ingredients and foods; government health initiatives; WIC; the Goya MyPlate/MiPlato program; school nutrition programs; research projects; as well as nutrient and food impact on diseases, general health, international cultures (ie Hispanic, African, Asian, Middle Eastern, etc) and much more. Meriterese presents effective health strategies that utilize natural cultural foods, like beans, olive oil, frozen acai and guava, to promote healthier lifestyles and disease prevention.

Meriterese also works with organizations like NovelResearch.org, a clinical research firm that conducts FDA supervised investigatory medical studies, and with physicians helping patients from countries around the world. She uses her formal education, training, and the Nutrition Care Process, to effectively research, design and provide multi-cultural Medical Nutrition Therapy to help disease recovery and prevention including diabetes, hypertension, obesity, heart disease, food allergies and more.

Meriterese’s background also includes a successful consulting career spanning over 15+years working with Celebrities such as Tony Little, Richard Simmons, Denise Austin, Frankie Avalon; WWF, NHL and other pro athletes; TV Networks like HSN & QVC; national health organizations; supermarket chains; companies and manufacturers of foods, beverages, nutraceuticals and botanicals. Meriterese serves as a technical advisor, lecturer, recipe developer and demonstrator for organizations such as USA Rice Federation, USA Pea & Lentil Council, American Pulse Association, as well as working with government and medical organizations (i.e. members of the NIH, NHMA.org, etc.); health professionals; schools and community groups. Meriterese appears regularly on TV and other media throughout the country, and is featured in a series of nutrition and health education videos.
