The show is not 100% free from any potential allergen, as it is hosted in a multi-use venue. All visitors must be aware of their health situation, take appropriate precautions and carry necessary medication.
The show is meant to meet the needs of people with a diverse array of health conditions. All products are gluten free however, many booths do contain other allergens.
Not all items at the show are certified gluten-free. Also, some items are made in shared facilities but meet certification and government requirements. It is up to each individual to read labels before using, consuming or purchasing products.
You know your health situation better than anyone else. If you are not able to tolerate a product, do not sample.
The products and advice of exhibitors are not endorsed in any way by the show organizers. Show organizers take no responsibility for discussions between visitors and exhibitors, nor for any situation that may occur as a result of those conversations.
Amy Fothergill was trained at Cornell University’s School of Hotel Administration. She never thought her culinary skills would be necessary to manage her family’s special diet but has found her cooking knowledge has come in handy. Currently she is a cooking instructor, consultant, blogger, and author of a gluten-free cookbook, The WarmKitchen. She lives in the San Francisco bay area with her husband and two children.
Colleen Francioli, CNC
Colleen Francioli is a certified nutritionist and author with a focus on helping people with IBS, other functional gastrointestinal disorders (FGIDs) and food intolerances. She once suffered from IBS herself and has since found life balance with the low-FODMAP diet, an elimination diet developed in Australia, proven to help relieve symptoms of IBS.
Colleen started her blog www.FODMAPLife.com to help others with IBS learn how to choose the right foods and stress relief for IBS instead of taking pharma drugs. Colleen’s book The Everything® Low-FODMAP Diet Cookbook is available now on Amazon, Target, Barnes & Noble, Indiebound and GooglePlay. It was published April 2016. It has more than 300 low-FODMAP and gluten-free recipes, plus diet basics, tips, menu plans as well as low- and high-FODMAP lists.

Diana Benedek, PhD
Diana is the Founder of 2GOOD2B , a fully dedicated gluten, corn and soy-protein free Café and Bakery in Encinitas, which also delivers across the country. Diana has a Bachelors in Microbiology and Immunology and went on applying this know-how to a Masters and PhD in Engineering. Although her career has been in water treatment, her passion is to help people realize that too many diseases can be caused by what they eat and providing them with access to healthy but delicious food. Her background in Immunology gives her the tools to understand how food allergens can cause inflammation which lead to diseases.
Edward A. Madrid, DC, CFMP, CGP
Dr. Madrid has been in clinical practice for 30 years as a chiropractor. Over the last 3-4 years, he has attained professional certifications in Functional Diagnostic Nutrition, Functional Medicine and Celiac/Gluten Disorders. He is a listed healthcare provider on the Celiac Disease Foundation website.
As a practicing clinician, he continues to stay abreast on the latest scientific research as it pertains to these chronic conditions to better help his patients and the public. Being a gluten sensitive patient himself, he has been devoting much of his time and practice to educating the public about Gluten Related Disorders. He is a presenter to numerous celiac groups including GIG and other local and national organizations.
