Amy Fothergill was trained at Cornell University’s School of Hotel Administration. She never thought her culinary skills would be necessary to manage her family’s special diet but has found her cooking knowledge has come in handy. Currently she is a cooking instructor, consultant, blogger, and author of a gluten-free cookbook, The WarmKitchen. She lives in the San Francisco bay area with her husband and two children.
Betsy Opyt RD, LD/N, CDE
Betsy’s inspiration to become a dietitian started at the early age of 14 and she has passionately worked in this field for over 15 years. Motivating others to make positive changes in their health is her main drive. Her first job was as Miss Indiana 2000 and she dedicated her year as a spokesperson for her platform “A Healthy Beginning” which was a health educational tour sponsored by the Indiana Dept. of Education. She has since then established a nutrition consultation practice as a Registered Dietitian and Certified Diabetes Educator in Naples, FL.
In Betsy’s spare time she started her very own healthy food company, Betsy’s Best specializing in gourmet nut & seed butters. Following a gluten free diet her self, she is proud to add another additional food product to the marketplace that is also gluten free. The desire to make healthy eating tasty is her passion. Betsy’s love for food, fitness, life, and being a role model as a mother and professional is her drive to motivate and inspire others to invest in their most important asset, their health.
Chef Vedam Clementi
Chef Vedam Clementi is a Gluten Free Certified Personal Chef and the author of Vedam’s Gluten Free & Fabulous!
After suffering for over two decades with digestive issues, Chef Vedam was diagnosed with Non-Celiac Gluten Sensitivity, and had to learn to cook completely gluten free. Staying true to his Southern heritage, Chef Vedam took his favorite down home comfort foods and converted his recipes to match his dietary needs. He created Vedam’s Gluten Free & Fabulous! a concise resource of those recipes.The cookbook not only covers Southern gluten free dishes, but also includes how to create your own flour blend, how to set up a gluten free kitchen and home, breakfasts, soups, side and main dishes, desserts and some of his other favorite dishes and cuisines.
In 2016, Chef Vedam became a Gluten Free Certified Personal Chef with the USPCA (United States Personal Chef Association) and serves North Georgia, Atlanta, Asheville, NC, Chattanooga, TN and the adjoining areas. Chef Vedam also teaches cooking classes and demonstrations in and around Atlanta, Asheville, and south Georgia all the way to Savannah.
Elizabeth Anthony Gronert
Elizabeth Anthony Gronert is a Wife, Mother (Single mom for 20 years!), and now Grandmother of 6, who has been in her own business for over 30 years. Elizabeth is a veteran speaker, seasoned trainer, business coach, published author of books, textbooks, magazine columns, technical videos and blog. She started in the Professional Beauty Industry as a salon owner, platform educator and international trainer. Elizabeth transitioned into Social Networking with a decade in Fashion helping people with Total Image Consulting. Elizabeth entered the Wellness Arena by helping people learn how to Sleep More Restoratively. Now, Elizabeth leverages her knowledge, resources and advocate partners to help people and families be healthy. Elizabeth speaks on how to avoid hidden ingredients that may harm like gluten, grains, dairy, allergens, toxins, & carcinogens in not only food but the products we use every day. Being a licensed Cosmetologist, Esthetician & MakeUp Artist for 34 years, Elizabeth has a passion for helping people with skin concerns use natural ways to look and feel their best – inside and out!
Ms. Babbitt has extensive experience in the restaurant industry. In addition to owning a restaurant in Decatur Alabama, she was previously the Managing Partner of a national chain restaurant, been a General Manager, Private Events Director and a Catering Director.
She is a trained chef and graduated with honors from Sault College in Ontario Canada. She has achieved several certifications and Awards in the hospitality industry including a Bronze Award in the Taste of Canada Food Show in Toronto Ontario.
Kathy Babbitt has over 20 years of business experience in entrepreneurship, leadership and general management. She has authored policies, procedures, employee handbooks and training manuals. She has also done menu planning and product development. She has been living gluten free for 11 years. She now owns a business helping others learn to live gluten free through personalized cooking classes and group classes in the North Alabama area.
