    I’m a college student living in my sorority house so I’m most looking forward to trying all sorts of products that are nutritious and portable! I can’t always eat something at every meal our cooks prepare so unfortunately I have to do a lot of meals on my own and it’s hard when I don’t have access to a kitchen! I don’t want to end up eating rice chef for every meal for the next year!

    I’m looking forward to sampling some of the gluten free products. Since I’m new to gluten-free eating and I live in a rural area where gluten-free products are hard to find, I haven’t had much opportunity to try what’s available. I don’t want to spend a lot of money on something I might not like, so I’m hesitate to buy things I haven’t tried first.

    I am very excited to attend- this is my first time. I consider myself a newbie at gluten free living(was diagnosed 1 year ago) and my husband and I are attending to learn more about living gluten free, learn about products & excited to have the chance to taste food that I don’t have to worry about and to check out new brands.     I am attending to support my wife who is gluten sensitive. We are excited for this experience. I can learn more about the GF lifestyle and try brands before purchasing to make sure we like it. It will also be nice for my wife to not worry about anything she tries b/c everything will be gluten free. It will also be great to be around a huge crowd of people that have the same thing in common.

    I just found out I have a gluten sensitivity this year, so it will be wonderful to learn about each of the vendors who will be there and to join the cooking lessons to learn how to customize my cooking to fit my new gluten free lifestyle! Can’t wait!

    MY friend and I will be traving over 4 hours to come to the expo. We both have celiac disease and we have been looking forward to this expo for a long time. We both have children that have celiac also. We are very excited to see what is new on the market and to learn a lot of new ideas and tricks to cooking Gluten Free. I would love to win tickets. It would help so much to off set some of the cost that we will have.

    My daughter is 4 now and was diagnosed with Celiac at around her 2nd bday! I have gone gluten free as of 2 wks ago so I can learn more about the disease, what she can eat and for my overall health as well! I could really use some baking and cooking tips so I am hoping to get some at the expo and also to try some different foods for my daughter and I to make at home together!

    I would love to be able to see hands on cooking & be surrounded by a variety of products that are safe for my family. Our entire family of 5 is gluten free because we have to but we are now considering going refined sugar free. What a blessing this expo would be from dinner ideas to school lunches to snacks!

    I am looking forward to coming to the Expo because my wife was recently diagnosed as a Celiac and we are having trouble changing our cooking habits. We have pretty much the same meals every 4 days. We need more help in cooking things other than we know now.

    I am most interested to attend the classes, especially Amy Browns’ Secrets to a Healthier You and The Brain Center: Brain and Tummy class. I am so excited to learn more since my daughters 15 year daily chronic headaches are gone since she has given up gluten. After all these years and numerous doctors I am looking forward what to purchase and how cook with the correct foods to help offset the expense and to optimize her health. I am so excited I do not have waste my time and any more money on a new doctors to figure WHY she has been in such pain.

    My daughter and I are SO excited about this years Expo! My husband took her last year and was amazed at how much she ate. It was the first time since she was diagnosed she could walk around and taste EVERYTHING! She was able to find several things she really liked and we were able to add foods to her diet with out wasting money on she didn’t like.

    I am most looking forward to spending a day and sharing this rare experience with my peers in our very first Culinary Arts class. The classes there will further our education for gluten free deserts and give us some ideas for those of us looking to own a restaurant in the near future who are thinking about adding gluten free items to the menu.     I am gluten and lactose free and this will be my first year to attend and I am looking forward to being in a gluten friendly environment where the answer to a gluten intolerant question is not “GLUTEN WHAT?” I’m so excited! I’m interested in visiting with the vendors because I have been looking for a career within the gluten free community around the Texas area. It will be a nice change to be around others with restricted diets as well.

    Would like to attend the expo. My husband and I are new to this, only about 4 months gluten free. For the most part I dislike it very much. Would like to sample some products, tired of spending a lot of money to throw a product away. I had hoped that when the kids were all grown up, i could retire from having to cook….guess not. Gluten free is not easy, and from what all i have tried not very tasty either, but it is necessary for us.

    I’m most excited about the Puff Pastry class on Saturday! One of the biggest challenges for me has been the inability to use premade crescent rolls, puff pastry sheets and phyllo dough in making tasty treats with my direct marketing business.

    I Am coming form California. so excited to be there and see all the gluten free vendors. It has been almost 2 years since i had to go gluten free ( as well as 50 other foods). I know your coming to SF in feb. 2013 but i could not wait!!!! I want to see what it’s all about so i can tell all of my SF Bay Area folks what to expect, and that they should go and check it out because I did and I hope to say it was GREAT!!!!!!!! Would even be better with free tickets due to the high cost of coming from california, but well worth it!! thanks for putting together this expo!!!!!!!!!!

My parents are both pre-diabetic and i would like to find good healthy options for them so they can enjoy what they eat at their age.     As a mom with 5 gf kids, and being gf myself, I look forward to tasting new products before buying exspencive products just to find out they are nasty! I’m excited that the classes are included and not extra this year. I’m bringing my oldest (who is not gf) as she does much of our cooking as well.     It’s amazing the progress that has been made in providing alternatives for people with dietary restrictions. I grew up with a severe corn allergy, as well as a mild dairy and wheat allergy. My mom was always finding ways to make breads, syrups, ice cream, etc without these ingredients so I would nto go without, but it was not easy. I’d love to be able to come out and sample these items, learn from the experts and implement some of these things into my life.

    I’m looking forward to learning how to prepare new gluten free dishes, as well as sampling the various gluten free products. However, what I am looking forward to the most is being with individuals who don’t judge or question the validity of a diagnosis of Celiac Disease.

    We are so excited to attend the Expo. Since being diagnosed with Celiac 5 years ago, our young son has felt singled out because of eating different food. But with many kitchen disasters he has determined he will be a GF chef and own his own CF cafe. We just moved 3 weeks ago from STL and when looking for things to do in our new city, he found this Expo and we are thrilled!

    Personally I came across this by a friend that has to eat all gluten free food. She is really excited about this opportunity but cannot make it since she has to work. I am looking to become more educated on this and hopefully fixing her a little treat on her birthday!

    I am looking forward to learning how to make the recipes I try come out right. I have bought several “all purpose” mixes and don’t know how to use them in recipes. I have developed many gluten and food allergies and am having to learn (as a grandma) to cook again.

    After 5 years away, my gluten-free daughter just moved home last night! I have also realized recently that I feel much better when I eat gluten-free–sooooo, I/we need to learn about products available AND some tasty ecipes that we and the rest of our family will enjoy so we don’t feel “gluten-deprived.” Thanks for hosting this EXPO!

    We’re excited to find foods that make our son feel like any other kid.. that we can take him snacks to share with other kids that taste just like any other delicious snack. Scrumptious meals that our dinner guests can enjoy and us not worry about our son accidentally eating from someone’s plate. These are the things we’re looking forward to discovering at this convention. =)

    I have been a Celiac since approx. 1971, I am so happy that there is so much available now for those of us who have to stay gluten free. This is the first Gluten Free Expo I’ve ever been to and am looking forward to attending it.

    I’ve been eating gluten free for about six months and it has truly changed my life and my health! However, I am just about to BREAK! I am bored and so tired of eating the same things all the time. Prior to going gluten free I ate high protein, high fiber, low carb and that’s what my body craves. I need some new fresh ideas, especially yummy ideas to get my family on board. I know they would benefit as well.

    I am a college student and I am excited to hear the different options for eating out/on the go meals. Also, purchasing gluten free items can be expensive so I am definitely looking forward to sampling so I know what to spend my money on. The class about hidden sources of gluten will also be very helpful. I am mainly looking forward to finding ways to eat healthier and safer without gluten!

    After being diagnosed with celiac disease two years ago, I am so excited that the gluten and allergen free expo is coming to Dallas! I always love trying new delicious and healthy gluten free foods and this expo is such a great opportunity for anyone with celiac disease or any other food allergy.

    My 7yr old son is allergic to numerous foods. Attending anything in public is always scary, but this weekend will be so great for him. I’m glad he has an event to attend that with be safe yet fun. Looking forward to the kids area and he will be thrilled will all the samples. He never gets to sample foods when we are out!!!

    I am wanting to attend with my 27 year old daughter who is hoping to get well enough to “get her life back”. We live in central Kansas and have been traveling to the Dallas area every 6 weeks for the past 6 months for doctor appointments. She started having gastrointestinal problems when she was very young so I continually had her to our local doctors who have had her on various antacids, etc since she was a 2nd grader. This continued on through her college years. I wanted a referral to a specialist that could help her because I knew this was not normal but there was always a “new prescription” etc that they wanted her to try first. In 2011 she was so sick and missed so much work using up all of her sick leave & vacation days that she was forced to resign from her job rather than being fired. I brought her home & got her an appointment with a gastroenterologist but the earliest opening was 8 weeks away-I even told them she was so sick that she had to quit her job! After waiting 8 weeks to get an appointment she was told that she had Irritable Bowel Syndrome. He prescribed an OTC probiotic & said she did not have celiac disease even though gluten made her sick. I asked if she needed to make a follow up appointment & he said “no, the probiotic would fix her”. Four months later she still could not stay well for more than 2 days at a time and our local doctors said they just didn’t know what was wrong with her & indicated they thought her problems were just “emotional”! My niece who lives in the Dallas area, helped to get my daughter an appointment with a much more knowledgable & empathetic gastroenterologist from this area. Although she is still healing I am seeing drastic improvements. I am hoping that my daughter will find the resources at the Expo to get healthy & strong & be able to work again so that she can start really living instead of just existing.

    I was 252 lbs, felt good and began walking at lunchtime. At a routine check-up, I was told that there was a possibility of a blocked artery and hospitalized, underwent angioplasty and had a stent procedure. In recovery I read “Wheat Belly” by Dr. William Davis” and discovered the dangers of modern day diet and the effects wheat and gluten have on the body. I adopted a wheat/gluten free diet and began cycling. 18 months later I am 195 lbs, blood pressure 119/68 and just competed in the Richardson, TX Corporate Challenge.
    However, the challenge has been in finding recepies and breads that fit the Mediterranean diet. I am looking forward to today’s GF Expo in Dallas.
